Got Fresh Cilantro?

Cilantro, an excellent herb to use with Mexican, Indian and Thai dishes (just to name a few). It is pretty cheap but when you buy it in the grocery store you get a lot of it. It usually goes bad before I can use it all. The old method of dealing with this was to make a Cilantro Pesto Sauce. As yummy as it is, you will be having Cilantro Pesto about once a week, not that it would be a bad thing.

The best thing that I have found to keep the cilantro is chop it up and place it in ice cube trays, then top them up with water and place in the freezer. Once frozen they can be placed in a freezer bag to free up your ice tray. They can be used as whole cubes or they can even be cut up if you need a smaller quantity.

This method works well if you are cooking with it, such as a jambalaya or Indian butter chicken. Unfortunately it wont work very well for that cilantro pesto or other dishes that require the freshest of ingredients. I prefer using the frozen cilantro over the dried.
