The Universal Chipotle Butter

Looking for a little something to liven up steaks? How about popcorn? This is a great super easy recipe that you will use forever, especially if you like things a little on the hot and wild side. I saw this on Take Home Chef, thanks Curtis, and had to try it for myself. Now I always make sure I have some on hand. Now, what you need is...

1/2 cup of butter
2 tablespoons of chopped chipotle peppers (they come in a can)
2 tablespoons of chopped fresh cilantro (check the cilantro tip here)
1 tablespoon of tequila
salt and pepper to taste

So really its pretty easy. Mix all the ingredients together in a bowl. Make sure you mix it well. Then place it on a sheet of wax paper and roll it into a tube of butter. Place it in the fridge so it will harden.

For the steaks, marinade them if you wish, near the end of the cooking process just place some butter on it and let it melt on the steaks. After a minute or two flip the steak and add a few pieces to the other side and in a minute you will have some very delicious steaks.

As for the popcorn just melt as much butter as you would like and pour it over the popcorn. The leftovers will keep for just about ever. I keep it in the freezer wrapped in the wax paper.
